Jamaican jerk wings!
Jabenero, allspice, cumin, orange juice, lime juice, ginger, fennel and brown sugar.
Third Course
“Shrimp Cocktail is Dangerous and You Can Tally Me Banana”
Passion fruit and shrimp ceviche!
Tiger prawn shrimp, papaya, mango, banana, cilantro, onion, red bell pepper, grilled banana pepper, garlic, banana liquor and Mexican orange soda.
Fourth Course

Roasted pork loin, guava glaze and calypso rice!
Pork loin, banana ketchup, coriander, shallots, guava juice, lime zest, brown rice, mustard
greens, yellow squash and tomato.
Fifth Course
“Shrunken Head Caramel Apple”
Rum poached and cherry wood smoked apple
Jamaican Rum, Honey crisp apple, leche caramel, Jamaican ginger beer, star anise, cinnamon,
corn husk and cherry wood.
