If you’ve ever dined at Eclipse Restaurant or sipped a specialty cocktail on our Rooftop Terrace, you know the Moonrise Hotel offers some of the finest fare in the galaxy.
The secret to our delectable dishes and drinks is the stellar staff who prepare and serve them. And we’re excited to announce that one member of the team, Seth Wahlman, is our new Food and Beverage Director!
Seth, a St. Louis native, served as our Bar Manager for the past six years and has been in the business for the last nine years.
“I always thought bartending was one of the cooler jobs around, and then found I had a knack for, it,” Seth says. “I got into it at the right time with the craft cocktail movement in the mid-2000s. I started to experiment with flavors and it became my passion.”
That passion has certainly paid off. Seth has twice been named Riverfront Times’ Bartender of the Year. If you’ve ever had one of his Month-Old Manhattan’s, it’s easy to see why.
As Food and Beverage Director, Seth will oversee our restaurant Eclipse, Eclipse Lounge, the Rooftop Terrace Lounge, the Rooftop Twilight Room, In-room Dining, Catering and all culinary and beverage personnel.
“I want to apply the same structure and technique we use behind the bar to the food program and really sync the restaurant and bar,” Seth says.
Seth’s taking the helm during an exciting time in the Moonrise Hotel’s cosmic journey. We’re combining our Eclipse dining room and bar to make way for more meeting space due to high demand.
“I’ve always preferred a more intimate space for a restaurant,” Seth says. “This gives the kitchen a lot better control over the experience. It’s a great chance to really make a bar-and-restaurant space, while creating a modern banquet space at the same time.”
The new lounge/restaurant space is due to open around the first of June.
